Reflection

Today I went to Donaldson Farm, where Margaret Masiello, a qualified Celiac dietitian, gave an hour-long talk to a small group of Celiacs and people who were interested in a gluten-free diet. It was a small group, but I learned a lot about many foods, as well as how to read labels to find out whether processed food is gluten-free or not. I found out that, thanks to the USDA, a product label has to tell you whether a product contains wheat but it doesn't have to tell you if it was produced in a facility that also processes wheat products. I also learned that distilled products are always gluten-free, because the gluten molecule is too heavy to rise with the steam. I had an excellent time, and as you can see, I learned a lot.
